A Flavour of Lavacchio

"Jamie and Ailsa have turned their farm at Col di Lavacchio into a haven of peace and tranquillity and at the end of a long and hard British winter I can think of few better places to go to in the spring to help ease yourself into the warmer, welcome mindset of summer."
Cameron McNeish, TGO Magazine

At Lavacchio we have the most enviable privilege to work a remarkably fertile, beautiful land and produce an abundance of the finest raw ingredients. We work according to organic principles and incorporate the best of local knowledge and custom in harvesting a vast range of fruit and vegetables, herbs and nuts.

As members of Responsible Travel and the Slow Food movement, we ask that visitors help us to take care of this extraordinary environment.

"By the time you hit Barga, you're back to Italy in the raw: small roadside cafes serving voluminous lunches and Piaggio three wheeled Apes buzzing unsuspecting visitors"
Richard Bath, Scotland on Sunday

Agri...

Lavacchio is a 26 acre farm with a chestnut plantation, terraced pasture, over 100 fruit trees, an olive grove, a small vineyard, sheep, goats, ducks, guinea fowl, hens, and an extensive vegetable and herb garden. A range of home-made jams and pickles is available to buy:

...Turismo

Up to 14 guests split between La Fattoria (10)and La Stalla (4). The houses are 100m apart and the pool is set in a private, secluded hollow with wooden loungers and a small pool house.

"In order to do our bit for the environment we have installed photo-voltaic panels to generate our own power, solar panels to heat our water and catchment tanks for rainwater. We leave our hay meadows until the wild flowers are over and ask our guests to contribute to our compost bins as well as sort the refuse for recycling. Every little helps."

Pizza evenings make the most of the old wood-fired oven at La Fattoria and are a riot of frantic activity. An initial demonstration often precedes a hands-on experience when you can concoct the pizza of your dreams.
